Why Egg Bites with Cottage Cheese
As you probably have guessed it, the secret ingredient that takes these cottage cheese egg bites to the next level is in fact….cottage cheese.
These egg bites are actually soft, moist and not ‘rubbery’ in texture. You know how eggs often gets hard and rubbery after baked in the oven. Well, not these cottage cheese egg bites!
Cottage cheese adds a rich and creamy texture to the egg bites and reduces the “eggy” texture in them. With its mild and fairly neutral flavors, cottage cheese doesn’t overpower the taste of the other ingredients in the egg bites as well.
I have to admit, it took me a long time to even want to publish an egg bite recipe on the blog because it was hard to get the texture right. It wasn’t until I tried making egg bites with cottage cheese that I fully approved of egg bites.
Cottage cheese egg bites are super versatile and can be made with your favorite protein and/or vegetables. We are keeping ours simple here and making it with bacon…because bacon makes everything better and we love our bacon around here.

Ingredients
These cottage cheese bacon bites are made using some household staple ingredients. They include:
- Eggs – Can’t have egg bites without eggs! 😉
- Cottage cheese – Key ingredient! Makes the egg bites soft, moist and smooth. Don’t worry if your’e not a fan of cottage cheese, cottage cheese taste is very mild once it is cooked. I recommend using small curd cottage cheese for this recipe.
- Bacon bits – use good quality bacon bits for best flavor! Alternatively, you can cook the bacon and then cut them into smaller bite-size pieces (this is more labor intensive and will take a bit longer)
- Cheese – any mild cheese such as Colby jack, Mozzarella, cheddar works great. Shred it so it dissolves better in the egg mixture
- Salt – this spices up and really enhance the flavors of the egg mixture
- Black pepper – use fresh black ground black pepper for the best flavor
How to make egg bites with cottage cheese
These delicious under-30-minute, no-sous-vide required cottage cheese egg bites will will revolutionize your simple breakfast routine!
Here is how you make them:
Step 1: Prepare egg mixture
In a large bowl, whisk eggs until the yolks and whites are combined.
Fold in the other ingredients – bacon, cottage cheese, shredded cheese, salt, and pepper.
Grease well a 12-cup muffin tin…be generous because the eggs do stick to it if it is not greased well.
Add egg mixture to each cup and fill it up to 3/4 full. There should be enough mixture to fill up to 12 cups.

Step 2: Bake!
Place muffin pan on the top rack of the oven, and place a pan of water on the lower rack of the oven. Having a pan of water will help keep these cottage cheese egg bites moist.
Bake for 23-25 minutes at 325℉.
When it is done, egg bites should no longer be jiggly in the middle, and toothpick should come out clean when inserted into the middle of the egg bites.
Step 3: Serve
When done, remove muffin tin from oven, and let it cool for 2-3 minutes.

Remove the bacon egg bites from each of the cups. Do not let them sit in the cups for too long after they come out from the oven as that will make it harder to remove those cottage cheese egg bites.
They do stick pretty easily, even with a greased muffin tin!

Cottage cheese egg bites are best enjoyed warm. They should be soft, moist and flavorful with the delicious combination of cheese, eggs and bacon.
I love them for so many reasons. Not only are they super tasty, these protein packed goodies are the perfect bites in the morning and a few of them will typically keep me fully for at least a few hours.

Tips and Tricks
A few things to note to ensure success when making these bacon egg bites.
- Easy removal: For easy removal, grease muffin tin generously. Egg bites do get stuck easily so greasing it well is important. Silicone muffin tray can be used to remove baked egg bites more easily.
- Baking time: The baking time can slightly vary depending on your oven. The key is to bake until the tops are slightly golden brown and the center is set.
- Flavors: Don’t hesitate to experiment with different flavors by adding other ingredients like bell peppers, spinach, crumbled sausage, ham, or different types of cheese. Any meats added should already be fully cooked.
- Cooling period: Let your egg bites cool for a few minutes after you remove them from the oven. They will continue to cook from the residual heat and it will be easier to remove them from the muffin tin. But do not let cottage cheese egg bites sit in muffin tin for too long as it will get harder and harder to remove.

Frequently Asked Questions
1. Cottage cheese provides a creamy and soft texture that compliments the firmness of the baked eggs. It helps to keep the egg bites moist as the cheese melts while cooking.
2. Cottage cheese has a mild flavor that blends well with eggs, enhancing their taste without being overpowering.
This will also help keep egg bites moist.
The egg bites are done when the center is set and no longer jiggly. You can also insert a toothpick in the center and if it comes out clean, the egg bites are done.
1. Make sure you grease your muffin pan very generously.
2. Bake your egg bits in a silicone muffin tray – they do come out much easier in those!
Yes, this recipe can easily be adjusted. You can double it for a large gathering or halve it if you only want to make a small batch. If doubling, you may want to bake in two batches unless you can cook two muffin tins side by side in the oven (bake time should be about the same). Do not overlap muffin tin on top of each other in the oven when baking.

These egg bits are very easy to make so it’s great for me. They do taste a bit “eggy”. I think I might end up dipping in something. I didn’t have spray so I used crisp to grease pan so it stuck more than I’d prefer. If I make again, I might top with cheese as well as mixed in. We love cheese on our eggs.
Thanks for sharing how it went for you, Anita!
Can I sub some or all of the eggs for just egg whites? I’m wanting to pack as much protein in these babies as possible!
Yes absolutely!
I have made many versions of these trying to find ones that can replace my Starbucks habit of paying so much for two tiny egg bites. Well, mission accomplished. These are perfection. I followed the recipe exactly, except that I used sharp white cheddar. Thank you!!
What a compliment! Thank you! So glad you found a starbucks sub!! 😀
Delicious
So glad you enjoyed it!
Just made this; came out great! I did make a couple of changes. I did briefly blend the eggs and cottage cheese together in a blender. I just don’t like the little white bits of cottage cheese you see if you don’t. I also roasted some diced onions along with the bacon, an easy way to pre-cook the onions while you’re also getting the bacon cooked.
Anyway, they were super easy and super creamy and fluffy and light. I think that putting the pan of water underneath makes a big difference.
Great idea blending the egg and cottage cheese together for a smoother texture! So glad you enjoyed this recipe!
Delicious recipe. I used ground and browned bulk sausage, onions, green peppers., Colby jack cheese. yum!
Love the subs you made! Thanks for sharing!
How long can they be stored in the refrigerator? Do they last 5 days?
5 days should be fine! I would freeze it if you need it to last longer than that!
These are so yummy and amazing to have on hand for quick mornings. Are the nutrition facts you have posted for one egg bite? Or two? Thanks!!
It should be for just one egg! 🙂 Glad you are enjoying this quick and delicious recipe!
Hi there,
Just wondering is it 169 calories for 1 or 2 egg bites?
They are delicious by the way!
Maria
It’s for 1 egg bite. Thank you Maria! 🙂
I don’t like eggs but needed protein recipes. I love these egg bites! Flavorful, fluffy, makes me look forward to breakfast!
Happy to hear you are enjoying this and they make you look forward to breakfast! 🙂
Amazing recipe! My husband and I LOVED them. I’ll be meal prepping these for the foreseeable future!
That’s wonderful, Mei-Li! Thanks for the review!
Tasty! My husband put his on a bagel to make a sandwich. Good texture and savory flavor.
Such a great idea to make this into a filling for a breakfast sandwich! Thanks for sharing!
Best egg bites 🥰
Thank you thank you!
Perfection. I have tried other recipes in the past and they were rubbery, these were not! I like that you can add different veggies or meat depending what you have on hand. This will be a staple in my house from now on!
That’s awesome! Makes me to happy to hear that! Thanks for sharing 🙂
These are great. I have made them several times now and find it is much, much, MUCH easier to get them out of the muffin pan if you use a silicone one.
Also, I was out of cottage cheese last time I wanted to make the, so subbed Trader Joe’s high protein extra thick Greek yogurt and it worked just as well.
Thanks for sharing the substitution you made and the silicone muffin pan trick! Glad you are enjoying these.
Omy! I will be making these. Just bought the Kirkland Sous Vide Egg Bites at Costco. Thought I would try them. Should have looked for your recipe first! Unbelievable, the amount of ingredients in them. They tasted good, but at that price, I thought I would check to see, if I could make them myself. Your recipe comes close to the one I bought, with the bacon and cheese in it.
Did you sprinkle them with parsley?
Yes I topped them with parsley at the end but that I did it to make the food pop in the photo 🙂 Totally optional and not necessary 🙂
what the serving size for the nutritional information?
1 egg bite!
I have used cottage cheese in my omelets and scrambled eggs for years. Definitely gives them a fluffy less “eggy” taste. I use turkey sausage crumbles for a more diet friendly lighter calorie option.
Freezing these in sandwich baggies and just taking them out the night before and putting in the fridge has been my go to for decades… even before they were popular. My kids would eat them as is, break them up and put in a tortilla for a quick breakfast burrito on the run, and we’ve also heated them in the microwave and squished them in a toasted English muffin… option galore to my a quick and healthy breakfast and minimizing the clean up!
Agree! Love cottage cheese in eggs! It truly is a game changer! Thanks for sharing, Ann
So good! I added spinach and they turned out perfect!
Great add! Thanks for sharing!
I would have given it 10 stars if I had the choice! Soooo good!
I used individual silicone cupcake holders and added an extra egg. I found a 1/3 cup fit into the cups just perfectly. I only had cheddar cheese, so I used that, but from the comments I think any cheese would be great! I put the cups into a pan and poured the water around them.
My husband said he could eat all of them, if I let him!
Thank you! What a compliment <3 Made my day! 🙂
