These bacon egg bites are baked in the oven, yet maintain that moist and soft texture. Why Egg Bites with Cottage Cheese
As you probably have guessed it, the secret ingredient that takes these cottage cheese egg bites to the next level is in fact….cottage cheese.
These egg bites are actually soft, moist and not ‘rubbery’ in texture. You know how eggs often gets hard and rubbery after baked in the oven. Well, not these cottage cheese egg bites!
Cottage cheese adds a rich and creamy texture to the egg bites and reduces the “eggy” texture in them. With its mild and fairly neutral flavors, cottage cheese doesn’t overpower the taste of the other ingredients in the egg bites as well.
I have to admit, it took me a long time to even want to publish an egg bite recipe on the blog because it was hard to get the texture right. It wasn’t until I tried making egg bites with cottage cheese that I fully approved of egg bites.
Cottage cheese egg bites are super versatile and can be made with your favorite protein and/or vegetables. We are keeping ours simple here and making it with bacon…because bacon makes everything better and we love our bacon around here.
Bacon egg bites are not only delicious, but makes the best grab-and-go and make-ahead breakfast. I store them in the refrigerator or freezer, and warm them up in the microwave and eat them on the go or really quickly sitting down by the kitchen counter.

Ingredients
These cottage cheese bacon bites are made using some household staple ingredients. They include:
- Eggs – Can’t have egg bites without eggs! 😉
- Cottage cheese – Key ingredient! Makes the egg bites soft, moist and smooth. Don’t worry if your’e not a fan of cottage cheese, cottage cheese taste is very mild once it is cooked. I recommend using small curd cottage cheese for this recipe.
- Bacon bits – use good quality bacon bits for best flavor! Alternatively, you can cook the bacon and then cut them into smaller bite-size pieces (this is more labor intensive and will take a bit longer)
- Cheese – any mild cheese such as Colby jack, Mozzarella, cheddar works great. Shred it so it dissolves better in the egg mixture
- Salt – this spices up and really enhance the flavors of the egg mixture
- Black pepper – use fresh black ground black pepper for the best flavor
How to make egg bites with cottage cheese
These delicious under-30-minute, no-sous-vide required cottage cheese egg bites will will revolutionize your simple breakfast routine!
Here is how you make them:
Step 1: Prepare egg mixture
In a large bowl, whisk eggs until the yolks and whites are combined.
Fold in the other ingredients – bacon, cottage cheese, shredded cheese, salt, and pepper.
Grease well a 12-cup muffin tin…be generous because the eggs do stick to it if it is not greased well.
Add egg mixture to each cup and fill it up to 3/4 full. There should be enough mixture to fill up to 12 cups.

Step 2: Bake!
Place muffin pan on the top rack of the oven, and place a pan of water on the lower rack of the oven. Having a pan of water will help keep these cottage cheese egg bites moist.
Bake for 23-25 minutes at 325℉.
When it is done, egg bites should no longer be jiggly in the middle, and toothpick should come out clean when inserted into the middle of the egg bites.
Step 3: Serve
When done, remove muffin tin from oven, and let it cool for 2-3 minutes.

Remove the bacon egg bites from each of the cups. Do not let them sit in the cups for too long after they come out from the oven as that will make it harder to remove those cottage cheese egg bites.
They do stick pretty easily, even with a greased muffin tin!

Cottage cheese egg bites are best enjoyed warm. They should be soft, moist and flavorful with the delicious combination of cheese, eggs and bacon.
I love them for so many reasons. Not only are they super tasty, these protein packed goodies are the perfect bites in the morning and a few of them will typically keep me fully for at least a few hours.
Variation and Substitution
Egg bites are super versatile, which is why they’re great for meal prep or using up ingredients in the fridge. Here’s a list of other ingredients and options you can mix and match to create endless egg bite variations.
- Meats: Breakfast sausage, ham, prosciutto, chorizo, smoked salmon
- Vegetable: Spinach, kale, arugula, bell peppers, onions, green onions, shallots, celery, mushrooms, zucchini, tomatoes, carrots
- Starches: Hash browns, diced potatoes, tater tots, sweet potatoes
- Fresh Herbs: Chives, parsley, basil, dill, cilantro, thyme

Tips and Tricks
A few things to note to ensure success when making these bacon egg bites.
- Easy removal: For easy removal, grease muffin tin generously. Egg bites do get stuck easily so greasing it well is important. Silicone muffin tray can be used to remove baked egg bites more easily.
- Baking time: The baking time can slightly vary depending on your oven. The key is to bake until the tops are slightly golden brown and the center is set.
- Flavors: Don’t hesitate to experiment with different flavors by adding other ingredients like bell peppers, spinach, crumbled sausage, ham, or different types of cheese. Any meats added should already be fully cooked.
- Cooling period: Let your egg bites cool for a few minutes after you remove them from the oven. They will continue to cook from the residual heat and it will be easier to remove them from the muffin tin. But do not let cottage cheese egg bites sit in muffin tin for too long as it will get harder and harder to remove.
Storage and Reheating
Cottage Cheese Egg Bites are great for meal prep. You can refrigerate or freeze any leftovers in an airtight container. Just reheat in the microwave for a quick breakfast on the go.

- ¾ cups bacon bits cooked
- 7 large eggs
- 1 cup cottage cheese
- 1 cup Colby jack cheese shredded

Instructions
