Why Egg Bites with Cottage Cheese
As you probably have guessed it, the secret ingredient that takes these cottage cheese egg bites to the next level is in fact….cottage cheese.
These egg bites are actually soft, moist and not ‘rubbery’ in texture. You know how eggs often gets hard and rubbery after baked in the oven. Well, not these cottage cheese egg bites!
Cottage cheese adds a rich and creamy texture to the egg bites and reduces the “eggy” texture in them. With its mild and fairly neutral flavors, cottage cheese doesn’t overpower the taste of the other ingredients in the egg bites as well.
I have to admit, it took me a long time to even want to publish an egg bite recipe on the blog because it was hard to get the texture right. It wasn’t until I tried making egg bites with cottage cheese that I fully approved of egg bites.
Cottage cheese egg bites are super versatile and can be made with your favorite protein and/or vegetables. We are keeping ours simple here and making it with bacon…because bacon makes everything better and we love our bacon around here.
Bacon egg bites are not only delicious, but makes the best grab-and-go and make-ahead breakfast. I store them in the refrigerator or freezer, and warm them up in the microwave and eat them on the go or really quickly sitting down by the kitchen counter.
If you want to spruce up your morning routine, give this cottage cheese egg bites a try. The best part…it takes under 30 minutes to prepare!

Ingredients
These cottage cheese bacon bites are made using some household staple ingredients. They include:
- Eggs – Can’t have egg bites without eggs! 😉
- Cottage cheese – Key ingredient! Makes the egg bites soft, moist and smooth. Don’t worry if your’e not a fan of cottage cheese, cottage cheese taste is very mild once it is cooked. I recommend using small curd cottage cheese for this recipe.
- Bacon bits – use good quality bacon bits for best flavor! Alternatively, you can cook the bacon and then cut them into smaller bite-size pieces (this is more labor intensive and will take a bit longer)
- Cheese – any mild cheese such as Colby jack, Mozzarella, cheddar works great. Shred it so it dissolves better in the egg mixture
- Salt – this spices up and really enhance the flavors of the egg mixture
- Black pepper – use fresh black ground black pepper for the best flavor
How to make egg bites with cottage cheese
These delicious under-30-minute, no-sous-vide required cottage cheese egg bites will will revolutionize your simple breakfast routine!
Here is how you make them:
Step 1: Prepare egg mixture
In a large bowl, whisk eggs until the yolks and whites are combined.
Fold in the other ingredients – bacon, cottage cheese, shredded cheese, salt, and pepper.
Grease well a 12-cup muffin tin…be generous because the eggs do stick to it if it is not greased well.
Add egg mixture to each cup and fill it up to 3/4 full. There should be enough mixture to fill up to 12 cups.

Step 2: Bake!
Place muffin pan on the top rack of the oven, and place a pan of water on the lower rack of the oven. Having a pan of water will help keep these cottage cheese egg bites moist.
Bake for 23-25 minutes at 325℉.
When it is done, egg bites should no longer be jiggly in the middle, and toothpick should come out clean when inserted into the middle of the egg bites.
Step 3: Serve
When done, remove muffin tin from oven, and let it cool for 2-3 minutes.

Remove the bacon egg bites from each of the cups. Do not let them sit in the cups for too long after they come out from the oven as that will make it harder to remove those cottage cheese egg bites.
They do stick pretty easily, even with a greased muffin tin!

Cottage cheese egg bites are best enjoyed warm. They should be soft, moist and flavorful with the delicious combination of cheese, eggs and bacon.
I love them for so many reasons. Not only are they super tasty, these protein packed goodies are the perfect bites in the morning and a few of them will typically keep me fully for at least a few hours.

Tips and Tricks
A few things to note to ensure success when making these bacon egg bites.
- Easy removal: For easy removal, grease muffin tin generously. Egg bites do get stuck easily so greasing it well is important. Silicone muffin tray can be used to remove baked egg bites more easily.
- Baking time: The baking time can slightly vary depending on your oven. The key is to bake until the tops are slightly golden brown and the center is set.
- Flavors: Don’t hesitate to experiment with different flavors by adding other ingredients like bell peppers, spinach, crumbled sausage, ham, or different types of cheese. Any meats added should already be fully cooked.
- Cooling period: Let your egg bites cool for a few minutes after you remove them from the oven. They will continue to cook from the residual heat and it will be easier to remove them from the muffin tin. But do not let cottage cheese egg bites sit in muffin tin for too long as it will get harder and harder to remove.
Storage and Reheating
Cottage Cheese Egg Bites are great for meal prep. You can refrigerate or freeze any leftovers in an airtight container. Just reheat in the microwave for a quick breakfast on the go.
Frequently Asked Questions
1. Cottage cheese provides a creamy and soft texture that compliments the firmness of the baked eggs. It helps to keep the egg bites moist as the cheese melts while cooking.
2. Cottage cheese has a mild flavor that blends well with eggs, enhancing their taste without being overpowering.
This will also help keep egg bites moist.
The egg bites are done when the center is set and no longer jiggly. You can also insert a toothpick in the center and if it comes out clean, the egg bites are done.
1. Make sure you grease your muffin pan very generously.
2. Bake your egg bits in a silicone muffin tray – they do come out much easier in those!
Yes, this recipe can easily be adjusted. You can double it for a large gathering or halve it if you only want to make a small batch. If doubling, you may want to bake in two batches unless you can cook two muffin tins side by side in the oven (bake time should be about the same). Do not overlap muffin tin on top of each other in the oven when baking.

So glad to hear!!
Just made these this morning – triumph of a recipe! I didn’t use any meat but Italian seasoning and they got gobbled up. They pop right out of a silicone muffin tray as opposed to the regular metal one! This will be our go-to for eggs from now on! Fast and easy, even for a chaotic Monday 🙂
SUCH a good idea to use silicone muffin trays! Thank you for sharing!! So glad this was helpful on a busy Monday! 🙂
I added sautéed onions green and red bell peppers to it! I also put a slice of turkey lunch meat in the bottom of the muffin pans and then put the filling in. They were delicious!
Yum! I love your add ons! Thanks for sharing!
I love how versatile this recipe is. I used a combination of Swiss and cheddar cheese, (which is what I had on hand), small pieces of ham and bacon, caramelized onion, and added my preferred spices (in this case, garlic powder and seasoned salt). They were delish! 😊
Love the flavor combination you put together! YUM!
I just made them today and they are amazing! Definitely keeping them on a rotation!! Thank you so much!
Yay! So glad this made it to your rotation! Thanks for sharing!
This made its way to my meal rotation. They are DELICIOUS and maintain moisture when reheating leftovers thanks to the use of cottage cheese. I add spinach to mine and sometimes sub with Parmesan or Swiss if I’m out of Colby Jack – you can’t mess up this recipe. 10/10.
Thanks so much, Caitlyn! They truly are a keeper!
Thank you for sharing your recipe. I plan to make these for me and my mom. They sound yummy.
I’m excited for you to try it, Cindy! Please let me know how it goes!
Egggcellent recipe ! My husband was so impressed . Super easy to make and cleanup of the muffin pans is easier if you use dawn powerwash before trying to tackle them Thanks for sharing 🫶
Thank you thank you! Good tip on the dawn powerwash! Those things are amazing 😀
added diced onion and yellow pepper. could not be more pleased!
Yum! I’m so glad to hear that you enjoyed this recipe!

Love the veggie swap for a healthier take! Thanks for sharing, Jennifer!
These are amazing! I added a small amount of caramelized onions and a 1/4 tsp of garlic powder. They turned out perfect!
Yum! I especially love the caramelized onion add (they are my fave!) 🙂
SO GOOD!!! I used pepper bacon, some feta and shredded sharp cheddar to equal the 1 cup of cheese.
Will make again and again!!
Yum!! I love this flavor combo!
I followed the recipe but they deflated when I took them out of oven and were a bit hollow inside! Also a bit rubbery rubbery. But they did taste good
I’m sorry this wasn’t more to your liking. There shouldn’t be any significant deflation, but the egg bites will deflate a bit naturally when they cool – that’s pretty normal and is a natural occurrence when object cools. One of the things I like the most about using cottage cheese is that it prevents that rubbery texture I typically dislike in egg bites – so perhaps you may want to add more cottage cheese to get it to the texture of your liking if it’s still too rubbery for you. Hope this helps!
I made these according to the directions. Even after adding 6 more minutes they weren’t cooked…they were still runny. Could the water pan placed underneath make it take longer?
Some ovens may not be accurately measuring the set temperature – some ovens overheat and some underheat. That being said, cook until the egg bites are completely set. If you want to get the most accurate reading of your oven temperature, using an oven thermometer can be really helpful. Hope that helps!
Just made these this morning, and I am beyond thrilled! Easy to make and SO delicious! First time I’ve made any with cottage cheese. It’s going in my recipe book! Thanks!
