Lemon Parmesan Pasta is a simple pasta recipe that I’ve been making over and over again for as long as I can remember. It’s one of those dishes that is both incredibly simple and tasty.

When we visited Italy, I fell in love with the pasta there. One thing I learned is that these pasta dishes are made with just a handful of simple ingredients but they are fresh and high quality, elevating the dish. This lemon garlic parm pasta is exactly that.

Here’s what you’ll need to make this dish (exact amounts are in the recipe card below):

  • Spaghetti: The classic long pasta for this dish. Use whole wheat, regular, or a mix of both. Linguine, angel hair, or fettuccine work too if that’s what you’ve got.
  • Salted butter: Forms the rich, silky base of the sauce. Unsalted works too, you’ll just need to add a touch more salt at the end.
  • Fresh garlic cloves: The more the better here. Fresh garlic (not the jarred kind) gives the sauce its bold, savory backbone.
  • Lemon juice: Freshly squeezed, not bottled. This is where all that bright, citrusy flavor comes from.
  • Salt: Balances and brightens all the other flavors.
  • Black pepper: Adds a little warmth and depth.
  • Pasta water: The starchy water left over from boiling the pasta. Don’t skip reserving a cup of it, it helps the sauce cling to every noodle.
  • Parmesan cheese: Freshly grated, please. It melts smoother and tastes so much better than the pre-shredded kind. If possible, use parmigiano reggiano.
  • Fresh parsley: Adds a pop of color and a fresh, herby finish.

How to make Lemon Garlic Parmesan Pasta

When life is busy, this is the dish for you. It’s so easy to make, and you’ll actually love eating it. Here’s the breakdown, step by step – it should take about 20 minutes total.

Step 1: Prep The Ingredients

Before you get started, chop your garlic and parsley, grate the parmesan cheese, and squeeze the lemon juice from 2-3 large lemons. Getting everything prepped ahead of time means the sauce comes together fast once the pasta is ready.

Step 2: Boil The Pasta

Bring a large pot of water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Don’t overcook it. Before draining, reserve about 1/4 cup of starchy pasta water (grab a little extra, just in case you need more later).

Drain the pasta. If it’s going to sit for a bit before you toss it with the sauce, rinse it with cold water and toss it with a splash of extra-virgin olive oil so it doesn’t stick together or overcook.

Step 3: Make The Sauce

While the pasta cooks, heat a large skillet over medium heat and melt the butter. Add the chopped garlic and cook until fragrant, just don’t let it brown or burn.

Add the lemon juice, salt, black pepper, and the reserved pasta water to the skillet. Bring it to a boil, then remove from the heat.

Quick note: when lemon juice and garlic interact – especially with older garlic – the garlic can turn blue. I freaked out a little the first time I saw it, but it’s a totally normal (and safe) reaction that doesn’t affect the taste at all.

If it bothers you, strain out the blue bits. Otherwise, just leave them – they’re 100% edible.

Step 4: Toss And Combine

Add the cooked pasta straight into the skillet with the sauce, along with 1 cup of parmesan cheese.

Toss everything together until the pasta is coated. If it looks a little dry, add another tablespoon or two of the reserved pasta water – but keep in mind this isn’t meant to be a wet, saucy pasta.

Garnish with extra parmesan and parsley, then serve right away.

Substitutions And Variations

This recipe is easy to make your own. Here are some of my favorite ways to switch things up:

  • Long pasta swaps: Any long noodle works beautifully here – try linguine, fettuccine, angel hair, bucatini, or regular pasta if that’s what’s in your pantry.
  • Creamier version: Stir in a splash of heavy cream or a spoonful of cream cheese along with the pasta water for a richer, silkier sauce.
  • Add protein: Toss in shredded rotisserie chicken, grilled chicken breast, or sautéed shrimp to turn this into a heartier main dish.
  • Spicy kick: Add a teaspoon or so of red pepper flakes to the sauce for a little heat.
  • Extra citrus: Add some lemon zest along with the lemon juice for an even more citrusy flavor.
  • Cacio e pepe twist: Skip the lemon and lean into extra parmesan and black pepper for a dish that leans more cacio e pepe than lemon pasta.
  • Herby upgrade: Swap the parsley for fresh basil or a mix of fresh herbs.
  • Veggie boost: Stir in sautéed spinach, cherry tomatoes, or asparagus for extra color and nutrients.

Make Ahead, Storage, And Reheating

Make ahead: You can prep the garlic, parsley, and parmesan cheese ahead of time and store them separately in the fridge until you’re ready to cook.

Storage: Let leftovers cool, then store them in an airtight container in the refrigerator for up to 5 days.

Reheating: Warm leftovers in a skillet over low heat with a splash of water or extra pasta water to loosen up the sauce. The microwave works in a pinch too, just cover it and heat in short bursts, stirring in between.

Tips And Tricks

A few things I’ve learned from making this pasta over and over again:

  • Use good parmesan: Buy a block and grate it yourself. It’s the best kind for this dish and melts so much smoother than the pre-shredded stuff. Refrigerated shredded parmesan is the next best option; skip the shelf-stable, non-refrigerated kind.
  • Reserve extra pasta water: Always scoop out more than you think you’ll need. It’s the easiest way to loosen up the sauce if it looks too thick.
  • Don’t skip fresh lemon juice: Bottled just doesn’t give you the same bright flavor.
  • Watch the garlic: Cook it just until fragrant. Browned or burnt garlic turns bitter and can throw off the whole dish.
  • Don’t panic over blue garlic: If it turns blue when it hits the lemon juice, that’s a natural reaction (especially with older garlic). It’s totally safe to eat.
  • Cook pasta al dente: Slightly undercooking the spaghetti means it won’t turn mushy once it’s tossed with the hot sauce.
  • Go easy on the pasta water at first: Add it a little at a time. This isn’t meant to be a wet, saucy pasta.
  • Make it healthier: Swap in whole wheat pasta, or use a mix of whole wheat and regular, for a little extra fiber.
  • Double it for meal prep: This recipe scales up easily and keeps well in the fridge, so it’s a great one to make in a big batch.

Frequently Asked Questions

Can I use a different type of pasta?

Yes! Any long pasta works well here, including linguine, fettuccine, angel hair, or bucatini. Short pasta like penne or rotini works in a pinch too, though it won’t hold the sauce quite the same way.

Can I make this pasta creamier?

It’s very similar. Lemon spaghetti and Italian pasta al limone recipes typically use olive oil and cream rather than butter, but they share that same bright, citrusy flavor profile.

Can I make this vegetarian?

Yes, this recipe is naturally vegetarian as written. Just add extra veggies like spinach or cherry tomatoes if you want to bulk it up.

Can this dish be served cold?

It’s best served warm. The butter and parmesan sauce firms up and gets a little greasy once it cools. If you want to eat it cold as a pasta salad, toss it with a little extra olive oil and lemon juice to loosen it back up before serving.

Ingredients

  • 16 oz whole wheat spaghetti or regular, or mixed
  • 6 tbsp salted butter
  • 7-10 cloves fresh garlic
  • 1/2 cup freshly squeeze lemon juice 2-3 large lemons
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup pasta water (from boiling the pasta) + more if needed
  • 1 cup freshly grated parmesan cheese + more for garnish
  • 1-2 tbsp chopped fresh parsley

Instructions

  • In a large pot, bring water to boil. Once water boils, add spaghetti and cook according to package instructions. Do not overcook. Reserve pasta water for later (be sure to reserve more than 1/4 cup in case you need more).
  • Drain pasta water. If pasta will be sitting for a while, rinse it with cold water and toss in olive oil to prevent it from sticking and getting overcooked.
  • While pasta is cooking, prep the rest of the ingredients. Chop garlic and parsley, grate parmesan cheese, and squeeze lemon juice.
  • In a large skillet, melt butter and cook chopped garlic until fragrant but do not brown or burn garlic. Add lemon juice, salt, black pepper and 1/4 cup pasta water to skillet. Bring to a boil and remove from heat.
  • Optional: If garlic turns blue (it's normal because of its reaction with lemon juice), using a strainer to remove garlic.
  • Toss pasta in sauce and 1 cup of parmesan cheese. Add additional 1 or 2 tbsp pasta water if needed, but note that this is not a wet pasta dish. Garnish with more parmesan cheese and parsley.
  • Serve and enjoy!

    I’ve tried lemony-garlicky parmesan pastas before but was always disappointed by the lack of flavor. This recipe, however, is fantastic! I used really good parmesan, fresh garlic and lemon, and Ronzoni Gluten-Free Thin Spaghetti, which worked perfectly and tasted just like traditional wheat pasta. Will be making again and again!

    I loved this recipe! If you love lemon like I do, this is the recipe for you. I used half a box of linguine since that’s what I had on hand and it was extra saucy which was a bonus. I also added some diced chicken for some protein. Can’t wait to make this again soon!

    I wanted to make a quick and easy dinner tonight and came across this Lemon Garlic Parmesan Pasta. It was delicious, just like every other recipe of yours I’ve tried! I was low on lemon so I only used half the amount but it still had a wonderful lemon flavor. I love lemon and thyme together so added a little fresh thyme when I sautéed the garlic and I added a splash of cream with the pasta water. It’s soooo good! I’ll definitely make this again.     This has become an almost weekly dish for me. I love about anything with parm. Cant believe Id not discovered it before. Great with just about anything, very versatile. I tried adding capers as someone else suggested and that took it to a whole other level of yum.
