One-skillet chicken meals such as Creamy Mushroom Chicken, Creamy Spinach Chicken, Skillet Chicken Parmesan have been my go-to chicken dinners on busy weeknights. Chicken dishes that are flavorful and NOT boring, yet easy to make on a weekday.

I’ve been cooking with coconut milk in dishes like Thai Red Curry Chicken and Mango Sticky Rice, but it was only recently I started using it as a creamy base in my skillet chicken dinners…and I cannot believe it took me so long to do that!

Instead of using heavy cream, coconut milk brings its own distinct sweetness and fragrance to this creamy coconut lime chicken recipe. It’s also a good substitute substitute for dairy-free cooking. It can mimic the richness of cream without any dairy. 🥥

What I love most about this braised coconut chicken is how it turns a handful of pantry staples into something that tastes like it took way more effort than it did.

The sauce comes together in the same skillet you cooked the chicken in, so cleanup is a breeze too.

The chicken by itself is smoky, garlicky and juicy, smothered in a creamy, fragrant, tangy coconut lime sauce that I want to splash over everything.

Kitchen Tools You’ll Need

You don’t need anything fancy for this one – just a few basics you probably already have.

  • Deep large 12-inch skillet: Gives the chicken and sauce enough room to simmer together without overflowing.
  • Meat thermometer: The easiest way to know your chicken is cooked through without drying it out.
  • Zester: For getting all that bright lime zest into the sauce.

Ingredients

Here’s what you’ll need to make this creamy coconut lime chicken (exact amounts are in the recipe card below).

For The Chicken

  • Chicken breasts: Halved lengthwise so they cook faster and more evenly. You can pound them thin after that if you want, but it’s not necessary.
  • Garlic powder: Adds savory depth to the spice rub.
  • Paprika: Brings a little color and warmth, along with that distinct smoky flavor.
  • Onion powder: Rounds out the seasoning blend.
  • Salt and pepper: For seasoning the chicken generously on both sides.
  • Cooking oil: For searing the chicken until golden.

For The Coconut Lime Sauce

  • Garlic: Fresh minced garlic gives the sauce its aromatic base.
  • Coconut milk: The star of the show – full-fat coconut milk makes the sauce rich and creamy.
  • Limes: Zested and juiced for a bright, tangy contrast to the coconut milk.
  • Salt: To season the sauce.

How To Make Creamy Coconut Lime Chicken

Step 1: Season The Chicken

In a small bowl, combine the garlic powder, paprika, onion powder, salt, and pepper. Generously season both sides of the chicken breasts with the spice mix.

Chicken breasts are halved length wise and generously seasoned on both sides.

Step 2: Sear The Chicken

Heat a deep skillet over medium heat. Once hot, drizzle in the cooking oil and add the chicken breasts.

Cook until the chicken reaches an internal temperature of 165°F, flipping halfway through. Once fully cooked, remove the chicken to a plate and set aside.

Chicken is cooked thoroughly in a hot skillet making sure to flip half way through cooking.

Step 3: Make The Coconut Lime Sauce & Bring Chicken Back In

Using the same skillet, add the minced garlic and stir until fragrant.

Add the lime zest, lime juice, coconut milk, and salt.

Mince garlic and lime zest are added to the skillet once the chicken is removed. Coconut milk is then added.

Stir the creamy coconut lime sauce, then bring to a simmer and cook for a couple of minutes, letting the flavors come together.

Return the chicken to the skillet and let it simmer for 30 seconds so that they soak in that luscious creamy coconut lime sauce.

Lime juice is added to the skillet. After simmering, the chicken breasts are returned to the skillet.

Remove from heat and if you’s like, garnish with parsley or cilantro, and lime wedges.

I like to serve with rice, potatoes, bread, pasta or whatever I can get my hands on to soak up that delicious creamy gravy…yum!

Variations And Substitutions

This recipe is easy to make your own – here are a few ways to switch it up.

  • Chicken thighs: Swap in boneless, skinless thighs for an even juicier result.
  • Shrimp: Use shrimp instead of chicken and simmer just until pink and cooked through.
  • Spicy kick: Stir in a pinch of red pepper flakes or a spoonful of chili garlic sauce.
  • Fresh herbs: Top with chopped cilantro or Thai basil for extra brightness, and hint of Asian flavors. They pair like a dream with the coconut milk.
  • Extra creamy: Stir in a splash of heavy cream at the end for an even richer sauce.
  • Curry twist: Add a teaspoon of curry powder or a spoonful of red curry paste to the sauce.

Make Ahead, Storage, And Reheating

Make ahead: You can season the chicken breasts up to a day in advance and keep them covered in the fridge until you’re ready to cook.

Storage: Leftovers keep well in an airtight container in the fridge for up to 4 days.

Freezing: Freeze the chicken and sauce together in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.

Reheating: Warm gently on the stovetop over low heat, or in the microwave. Add a splash of coconut milk or water if the sauce has thickened too much.

How To Serve Creamy Coconut Lime Chicken

This dish is delicious over jasmine rice or cauliflower rice for a lighter option. It’s also great alongside steamed veggies or a big scoop of noodles to soak up the sauce.

Some of my favorite vegetable dishes to serve alongside it are candied carrots, roasted spaghetti squash, and honey balsamic Brussels sprouts.

Tips and Tricks

  • Halve the chicken breasts: We do this to thin out the chicken breasts so that the center will cook faster. This also makes the chicken much more flavorful because more surface area will be in contact with the seasonings and creamy coconut lime gravy.
  • Use a meat thermometer: It’s the most reliable way to avoid overcooked, dry chicken. Once meat thermometer reaches 165ºF at the thickest part of the chicken, pull chicken from heat immediately.
  • Don’t crowd the skillet: Give the chicken breasts space so they sear instead of steam. Do not overlap.
  • Full-fat coconut milk is best: It’s best for a creamy, luscious coconut lime sauce. Light coconut milk works great as a healthier, lower-fat option, but the sauce will be thinner and less rich.
  • Taste and adjust the lime: Some limes are more tart than others – taste the sauce before serving and add more juice if you want extra tang.
  • Fresh garlic makes a difference: It gives the sauce a much better flavor than the jarred or powdered kind.
  • Let the sauce simmer: A couple of minutes on the heat helps the flavors meld and thicken slightly.
  • Rest before serving: Letting the chicken sit in the sauce for a minute helps it soak up more flavor.

Instructions

  • In a small bowl, combine garlic powder, paprika, onion powder, salt, and pepper. Generously season both sides of the chicken breasts.
  • Heat a deep skillet over medium heat. Once hot, drizzle with cooking oil. Once skillet is heated, add chicken breasts. Cook until the internal temperature of the chicken breasts reaches 165℉ making sure to flip the breasts half way through cooking. Once fully cooked, remove to a plate and set aside.
  • Using the same skillet, add minced garlic. Stir until it becomes fragrant. Add lime zest, lime juice, coconut milk, and salt. Stir, bring to a boil, and cook for a couple of minutes.
  • Return the chicken breasts to the skillet and cover with sauce. Remove from heat.
  • Serve and enjoy! Optional: Garnish with cilantro and/or parsley.
