A one-skillet chicken dinner featuring seared chicken breasts simmered in a creamy, fragrant and tangy sauce made from coconut milk, lime juice, and garlic. It's a quick weeknight meal that is loaded with flavor yet ready under 30 minutes!
In a small bowl, combine garlic powder, paprika, onion powder, salt, and pepper. Generously season both sides of the chicken breasts.
Heat a deep skillet over medium heat. Once hot, drizzle with cooking oil. Once skillet is heated, add chicken breasts. Cook until the internal temperature of the chicken breasts reaches 165℉ making sure to flip the breasts half way through cooking. Once fully cooked, remove to a plate and set aside.
Using the same skillet, add minced garlic. Stir until it becomes fragrant. Add lime zest, lime juice, coconut milk, and salt. Stir, bring to a boil, and cook for a couple of minutes.
Return the chicken breasts to the skillet and cover with sauce. Remove from heat.
Serve and enjoy! Optional: Garnish with cilantro and/or parsley.
