Roasting green beans in the oven is such a great way to prepare and serve green beans. Besides being yummy, it is such an easy and quick method that allows us to maintain both the nutrients in and textures of green beans. If you’ve ever wondered how to bake green beans that turn out crisp-tender every single time (not soggy!), this simple method is exactly what you need.

Baking Green Beans in the Oven

I am very passionate about cooking vegetables well because veggies can be so yummy! Veggies are not well loved because they have been cooked so badly for so long. And green beans is one of many veggies that has suffered this unfortunate fate.

Here’s the thing. Cooking green beans well is not complicated at all! In fact, roasting green beans is one of the best and easiest way to make truly tasty green beans.

Our oven roasted green beans are cooked through (but not overcooked), slightly charred, and still has a good bite to it. Say goodbye to soggy green beans forever from here on out!

In addition to having the perfect texture, it is well seasoned with fresh garlic and sea salt. Two very simple but powerful ingredients that compliment the green beans so well.

The other awesome thing about oven roasted green beans? This simple oven baking process locks in its nutrients without washing it away (which is what happens when we boil green beans in water), resulting in a healthier way to enjoy green beans.

Easy, delicious, healthy…I mean, what else can you ask for?

Let’s round up the ingredients needed for oven roasted green beans so you can see just how simple and easy this truly is:

  • Fresh green beans: What’s great about fresh green beans is that it retains its textures very well after roasting. Simply wash green beans and cut off the tips. You can use frozen but it just wouldn’t be as crunchy, and there will be extra moisture which is not ideal. Definitely avoid using canned green beans for this. There’s really no great substitute for fresh green beans. For convenience, look for pre-washed, pre-trimmed green beans at the grocery store. Haricots verts, which are slimmer French variety of green beans, can be used as well – and will need less bake time.
  • Olive oil: I love using good quality extra virgin olive oil. If you prefer, you can also use avocado oil or another neutral cooking oil.
  • Garlic: Fresh garlic cloves are the way to go for the best flavor. In a pinch, garlic powder can work as a substitute, though you’ll lose a bit of that bold, fresh garlic taste.
  • Salt: This is such an important ingredient to really open up the flavors. Feel free to add more to taste after baking if your beans still need it.

How to roast green beans in the oven

Step 1: Prepare green beans

Wash and cut the tips of the green beans. If you have green beans that are pre-washed and prepped, you may be able to skip this step.

Tip: Once green beans are washed, pat them completely dry with paper towels before moving on. Any extra water left on the beans creates steam in the oven instead of a good roast – so don’t skip this step if you want that crisp-tender (not soggy!) result.

Step 2: Toss Green Beans in Seasonings

Transfer green beans onto a baking sheet. I’m using a half sheet baking pan for the amount of green beans this recipe calls for. It holds everything perfectly.

Tip: To make clean up even easier, line baking sheet with aluminum foil.

Drizzle green beans with olive oil and add minced fresh garlic and salt. Toss together to make sure everything is well mixed and evenly coated in oil.

Spread the beans out in a single layer, with as little overlap as possible to ensure even cooking.

Step 3: Roast Fresh Green Beans in the Oven

Transfer baking sheet with green beans into the oven to roast. Bake for 15-17 minutes.

Green Beans are done when they are tender but not too soft, crunchy and slightly charred with an aromatic garlicky flavor.

I know it sounds crazy (because it’s green beans we are talking about here), but I was just standing by my kitchen counter munching on these roasted green beans at this point because IT IS SO GOOD.

Alternatively, you can also air fryer the green beans.

Air fry for 8 to 10 minutes at 375°F to 400°F, tossing halfway through. Air fry in two batches if green beans are over crowded. 

When green beans are done, transfer roasted green beans to a serving plate, and topped with almonds if desired for an extra crunch (but it’s not necessary).

Variations

  • Parmesan cheese: Sprinkle on some freshly grated parmesan cheese right after the beans come out of the oven, for a salty, savory finish.
  • Lemon juice or zest: Adds a burst of fresh citrus flavor to the green beans.
  • Other seasonings: Try adding Italian seasoning, Cajun seasoning, parsley, and more to the oil and garlic mixture.
  • Red pepper flakes: If you like a little heat, these will spice things up!
  • Black pepper: A pinch alongside the salt adds a little extra warmth and flavor.
  • Roasted veggie mix: Toss in some potatoes, carrots, or brussels sprouts alongside the green beans for a colorful, mixed roasted vegetable side dish. Heartier vegetables like potatoes may need a few extra minutes in the oven.

Make Ahead and Storage

Make Ahead: Oven roasted green beans can be prepared ahead of time and will heat in the oven beautifully. They do not have to be serve immediately once they are taken out of the oven, but should ideally be served shortly or refrigerate after 1 hour.

Storage: Store in airtight container in the refrigerator for up to 5 days.

Reheating: To reheat oven roasted green beans, simply reheat in the microwave until heated through (about 60-90 second). Alternatively, you can reheat it in the oven covered at 350℉ for 15-20 minutes or until heated through.

This oven roasted green beans recipe is one of my go-to side dishes because it pairs so easily with just about anything.

For a simple weeknight dinner, serve it alongside a protein like my Skillet Chicken with Blistered Tomatoes or Instant Pot Chicken Tortilla Soup for something warm and cozy.

It also makes a great addition to a bigger spread – try it next to my Twice Baked Sweet Potatoes for a holiday or potluck-style dinner.

If you’re serving a crowd that includes kids or picky eaters, a sprinkle of parmesan on top right before serving tends to win everyone over.

Here are a few extra tips to help you get perfectly crisp-tender oven roasted green beans every time:

  • Dry green beans well: After washing, pat the green beans completely dry with paper towels before tossing them in oil. Excess moisture is one of the most common reasons roasted vegetables end up steamed instead of crisp-tender.
  • Don’t overcrowd the pan: Spread the beans out in a single layer with as little overlap as possible so they roast instead of steam.
  • Swap in a cookie sheet if needed: Any large, rimmed baking sheet (or cookie sheet) works well here – just make sure it’s big enough to hold the beans in a single layer.
  • Adjust for bean thickness: Thinner green beans cook a bit faster, while thicker ones may need an extra minute or two – keep an eye on them as they roast.
  • Scale it up or down: This recipe calls for about a pound and a half of green beans, but it’s easy to scale up or down depending on how many people you’re serving.
  • Make it kid-friendly: Cut the beans into slightly smaller pieces and toss with a little extra parmesan – a great way to sneak in some veggies that even picky eaters tend to enjoy.
  • Store leftovers properly: Keep leftovers in an airtight container in the fridge for up to 5 days so they stay fresh.

Can I use frozen or canned green beans?

Fresh green beans are the best for this recipe. If needed, you can use frozen, but you will not get the same texture as you would with fresh green beans. Frozen green beans should be defrosted completely and pat dry before seasoning and baking. Avoid using canned green beans.

Why are my green beans still raw after baking?

Oven temperature can vary, so you should roast green beans until they reach your desired consistency. Most ovens should take 15-17 minutes at 400℉ to achieve a crunchy yet soft bite, but some will take longer. Also note that for the amount of green beans called for in this recipe, they should be spread out on a half sheet baking pan and not too crowded.

What’s the best temperature for baking green beans in the oven?

400°F is the sweet spot for this recipe. It’s hot enough to roast the beans quickly and give them a little char, without drying them out or overcooking them.

Why did my green beans turn out soggy instead of crisp-tender?

This is almost always a moisture issue. Make sure to pat your green beans completely dry with paper towels after washing, and don’t overcrowd the baking sheet. Both extra water and a crowded pan will cause the beans to steam instead of roast.

Can I make oven roasted green beans in the air fryer?

Are green beans the same as haricots verts?

Not exactly – haricots verts are a thinner, more delicate French variety of green bean. They work great in this recipe too, just start checking them a few minutes early since they cook faster.

Instructions

  • Preheat oven to 400℉. Wash and trim green beans if needed.
  • If preferred, line a baking sheet with aluminum foil or parchement paper.
  • Place green beans on the baking sheet.
  • Drizzle oil, garlic, and salt over green beans. Toss to mix everything together, and make sure all the beans are well coated.
  • Spread out the green beans as best as you can. A few can overlap but try to get most on a single layer.
  • Bake for 15-17 minutes, or until green beans reach desired consistency.
  • Serve and enjoy!
