Chocolate Rice Krispie Treats

Gooey, sticky no-bake Chocolate Rice Krispie Treats are delicious fudge-y rice Krispie bars made with gooey mini marshmallows. This dessert bar recipe is easy to make and can be made ahead as holiday treats, or for parties and get togethers.

Chocolate rice Krispie treats are perfect for rice Krispie treats lovers who love chocolate. It takes the traditional rice Krispie cereal and give it a rich chocolaty twist! The result is quite fabulous.

Chocolate Flavored Rice Krispie Treats

Chocolate rice Krispie treats has quickly become one of my favorite sweet treats. It is oh-so delicious…and also oh-so dangerously addictive!

To make chocolate rice Krispie treats, I add chocolate chips into melting marshmallows with some vanilla extract and melted butter (because butter makes everything better) to coat and stick the rice Krispie cereal together.

Then I sprinkle the top of our easy chocolate Krispie treats with flake-y kosher salt or sea salt to really highlight the flavors of the chocolate and also give a lovely salty and sweet flavor balance.

Chocolate rice Krispie treats come together in less than 20 minutes and it’s one of those easy dessert you can whip together in no time when the sweet cravings hit.

No baking is involved so you don’t even have to switch on the oven. You’ll just need a few minutes on the stovetop in order to melt the marshmallow and chocolate.

If you are looking for a little something extra or different to your traditional rice Krispie treats, chocolate rice krispie treats is the perfect way to scratch that itch!

Ingredients

Here are the ingredients you will need to make chocolate rice krispie treats:

  • chocolate chips – I usually use semi-sweet chocolate chips but feel free to use milk or dark chocolate chips if you prefer. You can also use chocolate chunks or baking chocolate.
  • mini marshmallows – I like to use the smaller mini ones so that it melts quicker.
  • unsalted butter – in a pinch, salted butter can be used as well.
  • vanilla extract – pure vanilla extract works the best, this brings a touch of vanilla flavor to the chocolate rice Krispie treats.
  • rice Krispie cereal – technically “Rice Krispie” is a cereal brand name for a type of rice cereal. We are basically referring to rice cereal. I have used off-brands and they work just as well.

How to make Chocolate Rice Krispie Treats

First, line 9′ x9′ baking dish with parchment paper. Greasing the parchment paper is not necessary, but you can if you wish.

You will need a medium to large pot to make the gooey marshmallow chocolate mixture, one large enough that you can eventually add the rice Krispie cereal in there and everything can be combined in one pot easily.

Add butter to the pot, bring to a heat, and melt butter under low/ medium-low heat.

When butter is melted, add mini marshmallows, vanilla extract, and chocolate chips to the pot.

Lower heat to low immediately and stir mixture until chocolate and marshmallows are completely melted.

Next, remove from heat and add rice Krispie cereal to the chocolate marshmallow mixture. Stir and combine until everything is mixed well.

Pour chocolate rice Krispie mixture into your baking dish that was lined with parchment paper, then use a rubber spatula to flatten and smooth it out.

Avoid overpacking it so that it is easier to cut into when it cools.

Optional: add a few mini marshmallows to the top of the rice Krispies and press to bury it slightly. Do this while rice Krispies are still warm so that it’s easier to bury them.

Sprinkle the top with flaky sea salt. If you are not a big fan of salt, you can skip this step.

Let chocolate rice Krispie treats cool and harden for about 30 minutes before slicing and enjoying every gooey sticky chocolaty bite of it!!

Trust me, you’ll be making these chocolate rice Krispie treats over and over again every time sweet craving hits.

It is rich, gooey, fugey, and absolutely fabulous.

Storage and Making Ahead

Storing: Store in air tight container at room temperature for up to 5 days. I recommend placing parchment paper in between the layers of chocolate rice Krispie treats to prevent them from sticking to each other or container.

I typically do not refrigerate my rice krispie treats because they harden too much in the refrigerator.

Making ahead: Chocolate rice krispie treats are great snacks to make ahead and should be stored at room temperature in the instructions provided above.

Tips and Tricks

Here are a few additional notes to ensure success when making chocolate rice krispie treats:

  • Low heat is key: Melt the butter and marshmallows over low heat. High heat can cause the mixture to harden and become difficult to mix.
  • Grease your tools: Spray your spatula or spoon and knife with a little non-stick cooking spray. This prevents the sticky marshmallow mixture from adhering and makes stirring/cutting easier.
  • Don’t overpack the mixture: When spreading the mixture into your pan, don’t press it down too firmly. Lightly spread and gently press to keep the treats chewy rather than hard.
  • Use a parchment liner: Line your pan with parchment paper for easier removal and cleaner cuts.
  • Cool completely: Let your treats cool entirely before cutting. This ensures clean cuts and prevents the treats from falling apart.

Frequently Asked Questions

How do I get my treats to be extra gooey?

There are a few options:
1. You can use 1/2 cup less rice Krispie cereal than what is called for.
2. Melt 1/2 cup more marshmallows.
3. Avoid over heating the marshmallow mixture.

Can I melt the marshmallows and butter in the microwave?

Yes, you can melt them in the microwave. Use a large microwave-safe bowl and heat in 30-second intervals at 50% power, stirring in between, until fully melted.

Can I add cocoa powder for a richer chocolate flavor?

Yes, you can add a teaspoon or two of cocoa powder into the marshmallow mixture for a deeper chocolate flavor. Mix well to ensure even distribution.

Can I spread the rice Krispies out in a 9×13 pan instead of a 9×9 pan?

Ingredients

Instructions
