Ingredients

COAT CHICKEN

Cube the chicken and pat dry. Combine flour, cornstarch and salt in a flat bowl. Whisk egg in a separate bowl.  Coat chicken pieces with egg mixture and then with the flour mixture.

COOK CHICKEN

Heat a thin layer of oil in a large skillet. Cook chicken pieces in a single layer, flipping once one side is cooked.  Cook chicken until internal temperature has reached 165°F. Remove chicken from skillet and set aside.

COOK VEGETABLES

Wipe out skillet.  Stir-fry vegetables in a small amount of oil for 1 minute under medium heat just until slightly softened. Remove from heat and set aside.

SAUCE

Add sauce ingredients to skillet, bring to a boil and lower heat and let simmer a minute or two until sauce thickens slightly. Toss chicken and veggies with sauce in skillet. Remove from heat promptly.

Serve with rice.  Enjoy!
