Sear onions in skillet until they are golden brown. Set aside. Thaw spinach in warm water. Drain And squeeze out as much moisture as possible. In a large bowl, combine filling ingredients.
Spread out one of the puff pastry sheets, then spread half the cream cheese spinach mixture evenly all over the puff pastry sheet. Sprinkle half of the shredded cheese over the top. Roll the puff pastry sheet until a tube is formed. Seal the tube closed.
Using a serrated knife, slice tube into 12 pieces of pinwheels. Place pinwheels at least 2 inches apart on baking sheet lined with parchment paper or greased. Brush the top with egg wash.
Bake in the oven at 425°F for 15 minutes. Remove pinwheels from oven and let them cool for a few minutes. Serve and enjoy!
