Grilled Chicken and Potato Summer Bowl

A delicious, healthy and easy Grilled Chicken and Potato summer bowl!  Grilled chicken and red Idaho® potatoes seasoned with herbs and spices, combined with grilled corn on the cob, lettuce and a refreshing zesty peach salsa.

Combine marinade ingredients and marinate chicken for 1-4 hours. Heat grill to medium-high heat.


Toss potatoes in the Poultry Herb Blend and place on greased foil. Spread the potatoes out and avoid overlapping them.

Grill potatoes and corn for 20-25 minutes turning occasionally until fully cooked. Grill chicken until it reaches 165°F. Combine peach salsa ingredients.

Slice grilled chicken into strips. Equally divide grilled chicken, grilled potatoes, corn, peach salsa, and  lettuce among three bowls.
