Avocado Tomato Salad Power Wrap

Salad in wrap form! An avocado, cherry tomato salad tossed in a delicious avocado lime cilantro dressing, wrapped in a tortilla. Yum!!

Ingredients

  • romaine lettuce
  • avocado
  • cherry tomatoes
  • block of medium white cheddar cheese
  • large tortillas

Salad dressing

  • 1 medium avocado
  • 20-25 cilantro leaves
  • 3 tbsp fresh lime juice
  • 1/2 tsp salt
  • 2 tbsp olive oil

Instructions

  • Chop up lettuce, half the cherry tomatoes, cut up avocados into small pieces and cube white cheddar into 1/2-inch cubes.
  • Throw all salad dressing ingredients into a blender/food processor to chop/mix everything together. Add more olive oil to make the dressing thinner if needed or preferred.
  • In a large bowl, throw in lettuce, cherry tomatoes, avocados, white cheddar and salad dressing, and mix well using a pair of tongs.
  • Place salad on one side of the tortilla. Don't overpack it or else it will be challenging to wrap.

  • Fold the bottom of the tortilla over the salad.

  • Then gather both of the sides and fold over. Tighten the wrap as much as you can (so salad don't have a lot of room to move around).

  • Roll the bottom over, continue to tighten the wrap as you roll.

  • Cut tortillas into half. Serve and enjoy!
