Dice the onion and crush the garlic, then sauté for a few minutes until fragrant and onions are softened.
Next, add the canned tomatoes, broth, red wine, basil, sugar, salt and pepper and bring to a boil. Then simmer until the soup has thickened.
Stir in heavy cream and boil for 1-2 minutes, then remove the garlic. If you prefer your soup less chunky, use a blender to make it creamy.
Garnish with shaved parmesan cheese and croutons.
