Roasted Zucchini with Garlic Parmesan

A simple and yummy way to oven roast zucchini! Baked zucchini is crispy on the outside, soft on the inside, and coated with garlic parmesan seasoning.

Wash and scrub zucchinis. Slice off the top and bottom. Slice zucchini in half lengthwise, then slice each half into quarters lengthwise. Repeat for the other zucchinis.

Using a towel, remove excess moisture from zucchini and spread out zucchinis in a baking dish.  Mix spices together in a bowl. Pour spice mixture over zucchini and use your hands to toss until evenly coated with seasonings.

Place a parchment paper on a baking sheet, followed by a baking rack. Grease baking rack with cooking spray. Line up zucchini spears on the baking rack without the spears touching each other. Scoop up any leftover garlic parmesan mixture and carefully place on top of the zucchini spears.

Bake for 20-25 minutes at 425°F, or until the tops are brown. Remove zucchini from baking rack so they do not stick to it. Serve and enjoy!
