Hawaiian style potato macaroni salad, or simply called potato mac salad, is a cold salad side dish. This is a popular side dish in Hawaiian cuisine, often served with grilled meats or other main dishes.
Gold Potatoes Macaroni Shredded Carrots Sweet Onion DRESSING Mayonnaise Sugar Apple Cider Vinegar
In a large pot, bring water to a boil. Add salt and diced potatoes. After 2-3 minutes, add macaroni and cook based on package instructions.
In a small mixing bowl, bring together all ingredients for dressing – mayo, apple cider vinegar, sugar and salt.
Bring together cooked potatoes and macaroni, along with the shredded carrots and sweet onions. Pour dressing all over the mixture and gently fold to combine the salad.
Refrigerate for at least 5 hours, or up to 24 hours. Serve cold and enjoy!
