Pad See Ew Noodles is one of our favorite Thai dishes. Flat rice noodles stir fried in a savory soy-based sauce with a hint of sweetness, tossed with some greens and an egg.
Wide Rice Noodles Beef Sirloin | Oil Oyster Flavored Sauce Soy Sauce | Fish Sauce Sugar | Chinese Broccoli Garlic | Eggs
Soak rice noodles in warm/hot water for 30 minutes, then drain. Slice beef sirloin. In a small bowl, combine sauce ingredients. Mix well, make sure sugar is dissolved.
Add 1 tablespoon of sauce to sliced beef. Marinate up to a couple of hours. Stir fry the beef in hot oil in a wok. Remove meat when desired doneness is reached. Next, cook one serving at a time.
Stir fry garlic for 30 seconds or so, then add Chinese broccoli. Stir fry till Chinese broccoli turn darker green. Next, add softened rice noodles and sauce, then add the cooked beef to it.
Move everything to one side of the wok and crack an egg to the other side and allow to cook for a few seconds before mixing with noodles. Repeat for each serving.
