When loaded baked potato meets potato salad, you got yourself this ah-ma-zing Loaded Baked Potato Salad, which is baked and loaded with yummy bacon, cheddar cheese and green onions.

Red Potatoes Bacon Sour Cream Mayonnaise Shredded Cheddar Cheese



Bake the bacon on abaking sheet lined at 42 5°F for 12-13 minutes.  Then drain on a paper towel and slice bacon into small bite-sized pieces.

Place potatoes on baking sheet lined with well-greased aluminum foil – do not overlap. Drizzle over more olive oil, salt and pepper.  Bake potatoes for 30-40 minutes at 425 degrees.

Let potatoes cool for 10-15 minutes. Then add them to a large bowl, and add sour cream, mayo, sliced bacon, shredded cheddar, and green onions. Combine well.

Garnish with more bacon, green onions and cheddar cheese, if desired. ENJOY!
