These Avocado Tacos are healthy, delicious and makes for a yummy meatless meal! Avocados are breaded and pan-fried, combined with black beans and a delicious tangy mango slaw, and wrapped in a warm tortilla.
Avocados | Egg | Mango Panko Breadcrumbs | Cabbage Lime Juice | Mayonnaise Tortillas | Black Beans Cilantro | Salt
Combine all the slaw ingredients and refrigerate, then slice the avocados and season with salt.
Next, dip the avocado into whisked egg, and coat in a mixture of breadcrumbs and seasonings.
Heat oil and cook the avocados until golden brown. Then warm up the tortillas, add black beans, some fried avocado and top with slaw.
Garnish with fresh cilantro, and enjoy!
