Avocado Tomato Salad Power Wrap
Salad in wrap form! An avocado, cherry tomato salad tossed in a delicious avocado lime cilantro dressing, wrapped in a tortilla. Yum!!
Equipment
Ingredients
- 4 cups romaine lettuce chopped
- 1 avocado
- 1 cup cherry tomatoes
- 1 cup block of medium white cheddar cheese
- 4 large tortillas
Salad dressing
- 1 medium avocado
- 20-25 cilantro leaves
- 3 tbsp fresh lime juice
- 1/2 tsp salt
- 2 tbsp olive oil
Instructions
- Chop up lettuce, half the cherry tomatoes, cut up avocados into small pieces and cube white cheddar into 1/2-inch cubes.
- Throw all salad dressing ingredients into a blender/food processor to chop/mix everything together. Add more olive oil to make the dressing thinner if needed or preferred.
- In a large bowl, throw in lettuce, cherry tomatoes, avocados, white cheddar and salad dressing, and mix well using a pair of tongs.
- Place salad on one side of the tortilla. Don't overpack it or else it will be challenging to wrap.
- Fold the bottom of the tortilla over the salad.
- Then gather both of the sides and fold over. Tighten the wrap as much as you can (so salad don't have a lot of room to move around).
- Roll the bottom over, continue to tighten the wrap as you roll.
- Cut tortillas into half. Serve and enjoy!
