Scrub the sweet potatoes under warm water and bake for 50-60 minutes. Then toss the pecans and brown sugar together.
Slice the potatoes in half, scoop out the flesh, and mash until smooth. Then mix in the rest of the ingredients.
Place the mixture back into the sweet potato skins and sprinkle with the pecan topping. Bake until the pecans are slightly caramelized.
