Ingredients

Beef

  • 1 lb ground beef
  • 2 cloves garlic
  • 1 tbsp oyster sauce
  • ½ tsp fish sauce
  • 2 tbsp brown sugar
  • ½ tsp salt
  • ½ tsp pepper

Coconut Curry Broth

  • 1 clove garlic minced
  • 1 tsp ginger minced
  • 1-2 tbsp red curry paste
  • 15 oz coconut milk
  • 1 cup beef broth
  • 1 tsp fish sauce
  • 2 tsp brown sugar
  • 1 lime juice
  • salt to taste

Other

  • 4 cups jasmine or basmati rice cooked
  • 6 oz broccolini
  • cilantro for garnish
  • cooking oil

Instructions

  • Heat a small skillet over medium heat. Once hot, add ground beef, garlic, oyster sauce, fish sauce, brown sugar, salt, and pepper. Mix and break up the beef as it cooks. Fully cook and then set aside.
  • Heat a small sauce pan over medium heat. Add garlic, ginger, and red curry paste. Cook until fragrant. Add coconut milk, beef broth, fish sauce, brown sugar, and lime juice. Stir and bring to a boil.
  • Once the broth is boiling, add broccolini. Blanch it for ~2 minutes but do not overcook it. Fish it out immediately once it turns dark green - we do not want it soggy. Taste broth to see if salt is needed. If it is need, salt to taste.
  • Assemble bowls by adding rice, cooked beef, cooked broccolini to a bowl. Pour broth over. Garnish with cilantro.
  • Serve and enjoy!
