An Asian-inspired rice noodle dish tossed in a homemade peanut sauce. This rice noodle recipe is cooked with carrots, green onions, cilantro, and peanuts, makes a healthy dinner, lunch, or side dish, and ready under 20 minutes!
Cook rice noodles according to package directions. Set aside.
In a small sauce pan over low heat, combine peanut sauce ingredients: peanut butter, hoisin sauce, brown sugar, garlic, water, red pepper flakes, and lime juice.
Keep over low heat until sauce comes to a boil. Boil for just a couple of minutes to slightly reduce the sauce. Optional: add salt to taste.
Add carrots, green onions, crushed peanuts, and cilantro to rice noodles.
Pour peanut sauce over noodles and toss to coat.
Garnish with more crushed peanuts, cilantro, and lime juice. Serve and enjoy!
