Easy Frittata with Ham, Tomatoes, and Spinach

An easy and yummy frittata recipe using a cast iron skillet. Egg mixture combined with ham, tomatoes, spinach and cheese. A delicious brunch and breakfast!

Equipment

  • Cast Iron Skillet

Ingredients

  • 10 large eggs
  • 1/2 cup whole milk
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • cooking oil
  • 2 cups fresh spinach packed
  • 1 cup ham sliced or cubed
  • 1 cup cherry tomatoes halves
  • 3/4 cup shredded colby jack cheese

Instructions

  • Pre-heat oven to 400 degrees F.
  • In a large bowl combine eggs, garlic powder and salt. Whisk to mix well.
  • Add cooking oil to cast iron skillet and heat skillet on medium heat.
  • Add spinach and saute until softened, do not overcook. Then add egg mixture to skillet.
  • Add cherry tomatoes, ham shredded cheese. Make sure to spread them out all over the skillet.
  • Remove skillet from heat and bring to oven immediately.
  • Bake for 20-22 minutes or until egg is completely cooked.
  • Remove skillet from oven and let it sit for a few minutes. Then slice them into triangular pieces and serve! Enjoy!
