Inspired by French onion soup, this is a delicious one-pot pasta recipe features rigatoni pasta tossed with caramelized onions in a and creamy white wine cheese sauce. It's so delicious!
In a deep sided skillet, melt the butter. Once melted, add the diced onions. Cook slowly under medium low/ low heat until the onions have caramelized and are softened. This will take ~8-10 minutes. Avoid burning onions.
Once onions are caramelized, bring stove to medium heat, then add garlic. Stir to combine.
Add white wine. Deglaze the pan by gently scrubbing the bottom of the pan. Bring to boil and allow to cook down for ~1 minute.
Add beef broth and stir to incorporate. Bring to a boil.
Add 2 tsp of salt and rigatoni pasta, then stir to combine. Cover skillet and simmer on medium low heat. Cook time is based off package instructions for pasta. Once time is up, remove cover and stir.
Add heavy cream and stir to combine, then add shredded cheese. Stir until fully melted. Remove from heat. Check to see if more salt is needed to open up the flavors. Optional: let pasta sit for a few minutes so that the sauce thickens.

Ways to thicken pasta sauce:
Add more heavy cream and/or cheese.
