In a medium bowl, bring together all the crisp ingredients. Stir to mix well. Optional: refrigerate for 15-30 minutes, then stir and mix crisp mixture again. This will enable the crisp to be more crumbly.
Peel apples then slice or cube them. Bring apples to a large bowl and mix together with flour, vanilla extract, brown sugar and cinnamon.
Bring apple mixture to a 9" round or square pan. Spread apple evenly onto the pan, then top with crisp mixture.
