Equipment

Ingredients

  • 2 tbsp butter
  • 1 cup onion diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 3-4 cloves garlic minced
  • ¼ cup all-purpose flour
  • 2 cups half & half
  • 4 cups chicken broth
  • 2 chicken breasts boneless, skinless
  • 16 oz potato gnocchi
  • 2 cup spinach
  • salt & pepper to taste

Instructions

  • Heat a Dutch oven or large pot over medium heat. Add butter and allow to melt.
  • Add onions, carrots, celery. Saute until they begin to soften. Add garlic. Cook until fragrant.
  • Add flour and stir. Pour in half & half and chicken broth. Stir to mix well. Bring to a boil.
  • Once soup base begins to boil, add chicken breast. Cook for about 8 minutes or until the internal temperature of the chicken reaches 165℉. Remove chicken and shred.
  • While shredding the chicken, add gnocchi into the soup base, and cook according to package directions. It usually takes a couple of minutes.
  • Return chicken to the pot and add spinach. Stir to combine.
  • Add salt and pepper to taste to open up the flavors.
  • Serve and enjoy!

Notes

Slow Cooker Instructions:
Bring all the ingredients except for flour, half and half, gnocchi, spinach and salt and pepper into the crockpot to cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken reaches 165℉.
Pull the chicken out and shred it, then whisk the flour into the half & half until smooth and stir it into the pot.  Add the gnocchi and shredded chicken, cover, and cook on high for about 15 to 20 minutes until the gnocchi is tender and the soup has thickened. Lastly, stir in spinach and season with salt and black pepper.
