This delicious egg bake casserole is made with cottage cheese, making it super moist and soft. Loaded with sausage, spinach, cheese and red bell pepper, it is a healthy and tasty breakfast casserole that makes for a delicious high protein breakfast.

thawed and pat dry

Colby jack cheese
shredded

Instructions
Preheat oven to 350℉.
In a skillet over medium heat, cook sausage making sure to crumble it as it cooks. Once fully cooked, set aside.
In a medium sized bowl, add eggs. Whisk well.
Add cottage cheese, bell pepper, garlic, spinach, cheese, salt, and pepper. Fold to combine.
Grease a 9"x13" baking dish.
Scatter crumbled sausage around the bottom of the baking dish.
Pour egg mixture over the sausage.
Bake for 40 minutes or until the casserole is cooked through.
As soon as you remove the dish from the oven, run a knife along the edge to help prevent sticking.
