Fall-apart tender beef chuck roast, seasoned with a warm spice rub and slow cooked in BBQ sauce until it shreds easily with a fork. A smoky-sweet, saucy shredded beef that's just as good piled on a bun as it is served over rice.
In a small bowl, mix together paprika, garlic powder, onion powder, dry mustard, salt, and pepper. Season all of the sides of the chuck roast with the seasoning mix.
Heat a large skillet over medium-high heat. Once hot, drizzle with oil and sear the chuck roast on all sides.
Place one cup of BBQ sauce in the bottom of the slow cooker. Place chuck roast on top of the sauce and then cover with the remaining 2 cups of BBQ sauce.
Cook on high for 5 hours or until roast is tender and easily shredded.
Once fully cooked, shred the roast.

Oven Instructions: Sear seasoned chuck roast in the Dutch oven on all sides, then add bbq sauce. Place Dutch oven at a low temperature (~300°F) in the oven for ~5 hours until beef is fork tender and shreds easily.
