Growing up in a Chamorro/Filipino household, I grew up eating spam. But as an adult, I haven’t had it much. Some reason, I was craving spam fried rice. Unfortunately my father is no longer with us and he was always the one to make it. My mom was no help with a recipe, so off to google I went and found this amazing and EASY recipe. I didn’t make many changes, except a tiny bit of sesame oil at the end. I may have added too much spam, because I used the whole can, but no complaints here! Highly recommend! My dad would certainly be proud, it tasted just like his!! Thank you!!!!

My hubby is from Guam and I lived there for 14 years. Anyway, Spam is huge on Guam as well. I learned to make a mean fried rice. And Chamorro families don’t cook small so I’ve never made fried rice with less than 5 cups of rice. LOL Anyway, I use Spam, breakfast sausage, & bacon in mine, along with scrambled eggs. No veggies in ours. Whenever my kids would have friends spend the night, they’d always want me to make fried rice the next morning. Anyway, when I saw Spam I was like, I totally have to share some info! My hubby introduced me to Spam and eggs. Sauté cubed Spam then add eggs and scramble. Best served with rice, of course! 🙂
