I think buttermilk will probably yield the tastiest, creamiest result! I have not tried coconut or soy milk before in this recipe but I imagine it will not have the same amount of richness milk or buttermilk brings. Hope that helps! Let me know what you end up doing and how it turns out!

I’m planning to try this recipe for my in laws this weekend! What kind of milk do I need to use? I usually use coconut or soy (I’m sensitive to dairy), but if buttermilk will yield best results I’ll use that (I can usually have it if it’s cooked in something and I don’t eat too much of it). Thank you!

Buttermilk sounds like a great idea! The thought is it'll be served with maple syrup - that's where a lot of the flavor will come from!

The consistency and fluffiness of the pancake is achieved. I thought it was a bit bland and didn’t quite have the pancake flavor. I may try this recipe with buttermilk or a pancake mix.

Yes! Bake it in a 8x8 or 9x9 square casserole dish! You may need to adjust down the bake time by 5-10 minutes.

Yes! You can do that. I don't think pancake mixes come out as soft and fluffy as this recipe but they definitely work.

You can make the batter up to 24 hours in advance. And you can definitely freeze the entire pan after baking. Make sure to bring to a full defrost before reheating.
