This was an easy weeknight dinner. I opted for the rotisserie chicken, and it was tasty. I liked the crunch of the tortilla chips on top. I doubled the black beans and rotel, and it fed my family of 5 with some leftovers. I’ll definitely make it again!

This was delicious! I made it for the first time tonight, and it was a hit! So easy and so filling! When my husband goes back for seconds, I know a recipe is a “keeper”!
