Made this for dinner and I thought it was delicious! It turned out very similar to a potato soup I make with diced potatoes, but I preferred the texture of this one. I made a few changes and they all worked out well: I had bacon but not bacon bits, so I chopped and cooked that up, then removed the bacon and sautéed some diced onion in the drippings and used that in place of melted butter. I didn’t have sour cream so I substituted whipping cream. I don’t think the cheese is necessary, but it’s nice to serve on the side. I also served it with green onion, which was delicious. I had so much leftover mashed potatoes and I’m so glad I found this recipe to use them up!

It was great added some potatoes from an au gratin mix because I was using the spices for something else and they worked wonderful in it

You can freeze leftovers but do keep in mind that dairy heavy soups such as this will have a slight change in texture after freezing. But it will taste just fine!
