In reply to <a href="https://www.joyousapron.com/hawaiian-chicken-with-coconut-rice/comment-page-3/#comment-27545">Bernice Chau</a>.

Hi Bernice, I am sorry it didn't turn out the way you hoped! I suspect that there's a higher citrus content in the marinade using fresh pineapple juice. Chicken marinated in high citrus content for too long can make the meat mushy, so I suggest marinating for a shorter period of time (2-3 hours) if using fresh pineapple juice. Hope that helps! Let me know if you try it again!

I am not sure why but my chicken was overly tenderized and mushy. I only deviated from the recipe using fresh pineapple juice that I puréed from the whole pineapple . The chix thighs marinated for 6 hours. I was so hopeful! The coconut rice turned out beautifully!

Loved this! Did two marinades and marinated zucchini, onions, and bell peppers and put on skewers Used the leftover marinade while grilling and heated with some honey and red bell pepper flakes. So good on the coconut rice!

Yes! You can sub olive oil for canola oil. And it works great in the oven too! Just make sure chicken is not sitting in the liquid when it is baked. You want to shake off access marinade before placing chicken on the baking pan.

Can you use olive oil as an alternative substitute for canola oil? Also has anyone ever baked/broiled this as I don't have a grill, but love the flavor combos?

It does not. It's for brushing onto the cooked chicken at the end!
