I refused to acknowledge that summer fruits are dwindling in the grocery stores. Apples, pears, pumpkins.. all those “Fall” fruits, are great. Not bashing their existence. In fact, I will celebrate them when the weather cools! (I’m in Texas, so that may mean November…) But, in the meantime, I will miss the oh-so-sweet, reasonably priced, and abundant blueberries, strawberries, and blackberries that I have been indulging in over the last couple of months. So let’s pay tribute to the loveliness that is summer fruits by indulging, one very last time, in this berry salad. I like to call this the “Goodbye Summer” Berry Salad.
Isn’t it just lovely? In a summery kind of way?
Fresh, crisp romaine lettuce. The sweetness of the berries combines perfectly with the tartness of the vinegar-based dressing. I use Brianna’s Blush Wine vinaigrette. It’s their version of red wine vinaigrette, and also my current go-to salad dressing. It’s available in most everyday grocery store. You can substitute with balsamic vinaigrette, or oil and vinegar.
Almonds give it texture and cut the sweet and sour flavor by just a teeny bit. And last, but certainly not least, homemade croutons with a hint of garlic flavor goes perfectly with this. Say goodbye to the stale butter and mass produced croutons from the store!
Every now and then, we grill a few pounds of chicken breast out on the charcoal grill, slice it up and keep it in the freezer or refrigerator for salad needs. You can also use store-bought frozen grilled-ready chicken breast, or rotisserie chicken.
One more thing I will say about salads – toss them! Use a big mixing bowl and tongs, give it room to be moved around when you toss. It makes a world of a difference when the dressing coats the vegetables and fruits evenly.
"Goodbye Summer" Berry Salad
Light, healthy salad that is reminiscent of fruity summer days
- 2 heads Romain Lettuce chopped
- 1 cup strawberries sliced
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/4 cup slivered almonds
- 4 tablespoon Brianna's blush wine vinaigrette
- 1 cup croutons
- 1 cup grilled chicken
Chop up 2 heads of romaine lettuce
Mix lettuce, strawberries, blueberries, blackberries, grilled chicken in a large mixing bowl. Add vinaigrette. Toss well using a pair of tongs.
Add croutons and slivered almonds
Transfer items from mixing bowl to individual salad bowls.
Serve and enjoy
