I am an amateur chef from Texas where tacos are common. I rarely follow a recipe to the letter. This one was no exception. I respectfully suggestions::
1- Spread a thin layer of sour cream on the taco after heating.
2- Rub the chicken with a chicken spice rub and then marinade. I use Mrs. Dash chicken seasoning.
3- Add corn to the ingredients list. I use frozen, but you can use canned. Roast it or cook in a cast iron skillet. If grilling, just use the cast iron skillet on the grill. If on the grill it needs stirring while cooking.
4- Use scallions instead of cilantro leaves. Most people do not have chilantro laying around. If you have cilantro seasoning you can add it anywhere in the prep stage.
5- Use cherry tomatoes quartered or halved. They should be softened so you can cook them with the corn.
6- Add diced and sauteed jalapenos for a bit of heat. (optional). You can remove the heat by removing the seeds and white membrane then soak in milk for as much time as you have.
7- I am a big fan of avocado. On this dish I diced one, paired it with the scallions, and used as a topping.

No disrespect to the food photographer, but the chicken size is way to big for the rest of the ingredients. It's just a part of the taco filling.
