Delicious moist muffins! I added a little cinnamon and some chopped pecans. Loved the crunch from the Pecans!!
There was a little coconut oil which seeped to the bottom of the paper muffin cups which tends to happen every time I bake with coconut oil.
Does this happen for everyone? I would love to know Lol.

Excellent, delicious easy to make recipe. Will try it again I’m sure!

Delicious! I added a little cinnamon and orange zest, very nice recipe, and also very easy and quick. I made them on my break during work.

Yes you can but coconut oil does provide a lovely aroma and flavor that really adds to the muffins. You will lose some of that if you use olive oil.

Those were really good! I used butter as I didn’t have coconut oil – 1:1 ratio, and my husband has a naughty sweet tooth so I sprinkled a little brown sugar topping before baking. They were lovely, and for myself without the brown sugar, they were plenty sweet but still light.
